Ostrich fern (fiddleheads)
Matteuccia struthiopteris
A fern of moist woods and floodplains with tall, vase-shaped fronds. Only its correctly identified young spring fiddleheads have the food use described here.
Native range
Temperate northern regions, including Ontario. Ostrich fern is recorded widely in Toronto-region wild habitats.
Typical season
Short spring fiddlehead window; weather shifts emergence. Identify mature colonies first, leave most fronds to grow, and follow local land rules.
Identification
Verify smooth green fiddleheads, loose brown papery scales and a deep U-shaped groove inside the stem, along with the mature colony. Other ferns are not substitutes. Health Canada advises washing, then boiling 15 minutes or steaming 10–12 minutes; discard the cooking water. Cook before frying or other preparation. Never eat raw or undercooked fiddleheads.
